Lisa's Fluffiest Buttermilk Pancakes

Lisa’s Fluffy Buttermilk Pancakes


1 1/4 cup flour

2 Tbsp sugar

1/2 tsp salt

1 tsp baking soda

1 tsp baking powder

1 egg, separated (VERY IMPORTANT)

4 Tbsp, melted and cooled

1 cup buttermilk

1/4 cup whole milk


In a medium bowl, whisk flour, sugar, salt, soda and baking powder.  In a separate bowl, whisk egg yolk, butter, buttermilk and milk.  Add yolk mixture to dry mixture and stir until barely combined.  Beat egg white until fluffy.  Add egg white to batter and stir until combined. (might be lumpy, bubbly but that’s okay).  Cook on grill, flip when bubbles form on the top.

Breakfast Egg Muffins

8 refrigerated biscuits

1 c cheddar cheese shredded

16 oz breakfast sausage roll (or 3-4 strips of bacon)

3-4 eggs

2 tbsp milk

Salt & pepper to taste

Preheat the oven to 375.


Generously spray muffin tin with cooking spray.


Cut biscuits in half and push into bottom of muffin tin.


Crumble and brown sausage roll or cook bacon.


Add to the biscuits in the muffin tin.


Sprinkle with shredded cheese.


Whisk eggs with milk and add salt and pepper.


Pour a little egg mix into each muffin tin carefully.


Place muffin tin on a baking sheet.


Bake in oven for 20-25 minutes, until golden brown and biscuits are cooked through.

Baked Omelette

10 eggs

1/2 c. all-purpose flour

1 tsp baking powder

1/2 tsp salt

2 c. shredded Monterey Jack cheese

2 c. cottage cheese

8 oz diced ham

1/2 tsp pepper

Preheat oven to 350 degrees.

In a large bowl, beat eggs with a hand mixer on medium speed for 3 minutes or until light and lemon-colored. Combine the flour, baking powder and salt in a different bowl. Gradually add eggs and mix well. Stir in cheeses and ham.

Pour into greased 13x9 in. baking dish. Bake at 350 degrees for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand 5 minutes before serving.


Expert Tips

If you'd like to lighten this up a bit, substitute some of the egg yolks by adding additional egg whites in their place. It results in a lower-calorie and lower-fat meal.


You'll get the best result if you use milk with a higher fat percentage like 2% milk, whole milk or cream. The fat gives you the best texture.


Prep it the night before! After pouring it in the pan, cover and place in the refrigerator. The next more pull out of the refrigerator, stir to make sure the ingredients are all on the bottom and then bake. We recommend baking it within 12-16 hours of prepping it.


Got leftovers? Reheat the slices by placing on a microwave safe plate and heating for about 1 minute. You can also reheat the leftovers in a pan at 325 degrees F for 10-15 minutes.


Want to mix things up? Change up the ingredients for different flavor profiles. A few different ideas are bell peppers, onion, ham and cheese for a "Denver" omelette. You can really add any type of vegetable, just make sure to finely chop them so they bake quickly.


Frozen vegetables will also work in this recipe, but make sure to saute them before adding them to the egg mixture.


If you'd like to change the meat up by adding bacon or sausage make sure to cook it before you add it to the egg mixture.


Another way to change things up is to use different cheeses!

Bundt Cake Breakfast

 1 cup diced ham

2 cups tater tots, still frozen

1 dozen whisked eggs

1 can Pilsbury Grand Biscuits, diced up *raw*

2 cups shredded grated cheese

1/4 cup milk


All mixed together.  Put in greased bundt pan.  Bake on 400 for 45 minutes.  When done, flip onto platter and cut and serve

Crockpot Breakfast Casserole

yield 8 -10

Ingredients

  • 1 dozen eggs
  • 1 cup milk
  • 1 package (32 oz.) of frozen hash brown potatoes
  • 1 lb of bacon – cooked, drained and cut into pieces
  • 1 lb of sausage, browned and drained
  • 1/2 cup diced green onions
  • 1 diced green bell pepper
  • 2 1/2 cup Shredded cheddar cheese
  • 1/4 teaspoon dry mustard
  • salt & pepper to taste

Instructions

  1. Layer potatoes, bacon, onions, green pepper and cheese in the crockpot in two or three layers.
  2. Add cheese.
  3. Beat the eggs, milk and mustard, salt & pepper together.
  4. Pour over the whole mixture.
  5. Cook with slow cooker on low for ten to twelve hours or until eggs are set and thoroughly cooked.

French Toast Sausage Roll Ups

Ingredients
  • 8-10 slices bread  , white or wheat sandwich bread
  • 8-10 sausage links , cooked
  • 3 eggs
  • 1/2 cup milk
  • 3 tablespoons granulated sugar
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 1 tablespoon flour
Instructions
  1. Slice crust off of bread. Use a rolling pin or your hands to flatten the bread. 
  2. Place a sausage link on the front edge of the bread and roll up tightly like a taquito. 
  3. Preheat griddle or skillet over medium heat. Grease well with butter.
  4. To a shallow dish add the eggs, milk, sugar, cinnamon, vanilla, and flour.
  5. Dip sausage roll ups into the egg mixture, rolling gently to coat all sides, and place on hot griddle. 
  6. Cook for a few minutes, turning gently as you go, until golden brown on all sides. Serve warm, served with syrup.

Crockpot French Toast

Breakfast French toast
-1 whole loaf of bread
--1 dozen eggs
--2 t vanilla
--4 cups of milk (1 used 3 cups of soy, and 1 cup of heavy cream)
--1/4 t salt
--2 t cinnamon
--1/4 cup brown sugar
--1/4 cup walnuts, or other desired nuts (optional. I did not use nuts this time.)

The Directions

I used a 6 qt Smart-Pot Crock-Pot for this. I'd recommend a 5 or 6qt for this dish. If you have a smaller crock pot, scale back a bit. Maybe only use 1/2 a loaf of bread.

Grease the inside of your crock pot very well with butter, shortening, or cooking spray. Slice your bread into large slices (if it's already sliced, just dump it in) and place the bread into the crock pot.

In a large bowl, whisk the eggs, milk, brown sugar, salt, cinnamon, and vanilla together. Pour on top of the bread.

Cover and cook on low for 6-8 hours. This is done when the bread has soaked up all of the liquid and the egg has cooked (you can tell because you'll see bits of cooked egg stuck to the bread). The bread will expand---it's like one of those spongy foam things that come in the capsules and turn into a dinosaur. Very cool.

After 8 hours, I had a bit of liquid left in the crock pot, but the bread on top was browned nicely and the egg was done. I took the lid off and went hunting for the camera, and then checked email, and then watered the garden. 30 minutes had passed before I remembered that I had left the lid off of the crock pot, and that it was still plugged in. BUT! all the moisture was gone and the French toast was perfect.

so there you go. I'd give that a try.

The Verdict.
Very good! We ate this for dinner, but I will most definitely make it again for a nice family breakfast or brunch.

Aebleskiver's Danish Buttermilk Pancake Balls




2 cups buttermilk   
2 cups flour
3 eggs
1 tsp baking powder
½ tsp salt
1 tsp soda
2 Tbsp sugar

Beat yolks, add sugar, salt, milk and flour.  Add soda and baking powder sifted together.  Last- add stiffly beaten egg whites.  Bake in shortening in Monks pan.  Turn w/ fork when brown and bake on other side.

Chad McLean's Amazing Rolls


1 quart milk, scalded
1 ½ cup shortening
1 ½ cup sugar
1 ½ T salt
3 T yeast, softened in ½ cup warm water
6 eggs
Flour to make soft dough

Put shortening and sugar into hot milk.  Let cool   Add eggs, salt, yeast and 4 cups flour.   Beat with a mixer for 3 minutes.  Add more flout to make soft dough.  Let rise twice.   Roll out to make dinner rolls.   Let rise double and bake at 375 for 15-20 minutes.  Makes amazing cinnamon rolls.

For cinnamon rolls- use ½ cup butter and 3 T cinnamon for the filling.   Add your favorite cream cheese frosting or icing.

GF The Ultimate Breakfast Cookie

4 1/2 cup oatmeal  (GF oatmeal)
2 t baking soda
1/4 c flaxseed meal
1 1/2 cup peanut butter
1/2 cup butter
1 cup brown sugar
3/4 cup sugar
1/4 cup honey
1 banana mashed
3 eggs
1 t vanilla
3/4 cup almonds
3/4 c chocolate chips

Cream the butter, peanut butter, sugar, brown sugar and honey.  Add the eggs, banana and vanilla.  Stir in oatmeal, baking soda and flax seed meal.  Stir in almonds and chocolate chops.  Drop by teaspoonful onto an ungreased baking sheet.  Bake at 350 for 12-14 minutes until browned.  Allow to cool on baking sheet.   Try adding dry fruits such as craisins and white chocolate chips

Breakfast Casserole

12 eggs mixed well
1 cup milk
4-6 cups hash browns
1 tube sausage ( Jimmy Dean Maple)
2 tsp salt

WRITE ON BAG BEFORE FILLING---
Add 2 cups water.  Cook on low 6-8 hours or on high for 2-4 hours.

Breakfast Burritos

Ingredients:

1 lb. Pork Sausage (I use Jimmy Dean)
1 Pkg. Hash browns (I use Simply Potatoes)
8 to 12 Large eggs
1/4 cup milk
1 pkg. shredded cheese (I use cheddar today, but I have used a Mexican blend)
salt and pepper to taste
1 to 2 pkg. flour tortillas (I used the soft taco size tortillas)

That's it.

All the ingredients (except the milk.)

Let's go through the steps.



1. Brown sausage - drain on a paper towel.


Cook hash browns in the same pan.

(I use a non-stick electric frying pan)



While the hash browns are cooking - 
In a large mixing bowl, whisk eggs, milk, salt and pepper.






Add browned sausage back to the pan with the cooked hash browns.


 Silly me, I forgot to take pictures of the next step - but it isn't hard. 

 Add the eggs to the sausage mixture and cook until the eggs are done, stirring gently.

After eggs are done - lay a tortilla on counter.  Place egg mixture on tortilla.  Top with cheese.  Roll into a burrito.




Depending on how many eggs you use and how large you make each burrito,  will determine how many burritos you will end up with.  On the day I fixed these I used ten eggs and made twenty-two burritos.



Wrap the burritos in plastic wrap.




Then place the wrapped burritos in freezer zip-lock bags.



I put four burritos in a small zip-lock bag and then place several of the smaller bags into a larger zip-lock bag.


Place in freezer.

When you are ready to eat - take the number of burritos you want out of the freezer (we usually only do two at a time) - unwrap  (yes, I am making a big deal about this - if you have wrapped the burritos in plastic wrap you MUST unwrap them!) - place in a paper towel and warm ONE of the burritos for 45 seconds - take out - warm the second ONE for 45 seconds.  Then put the first one back in the microwave for another 30 seconds. Repeat for second burrito. 

I know this method of warming sounds strange, but we have found to be able to heat the burrito all the way through, this is the best way.

Serve with salsa, sour cream, or plain.  Your choice.

Homemade Waffles


  • 1 1/2 cups (375 ml) flour
  • 2 Tbsp (25 ml) sugar
  • 2 tsp (10 ml) baking powder
  • ½ tsp (2 ml) baking soda
  • ½ tsp (2 ml) salt
  • 1 1/4 -1 1/2 cups (300- 375 ml) milk
  • 2 eggs
Preheat your waffle iron before making the batter.
Mix together ingredients making the batter slightly runny, it will puff up as you cook the waffles.
Spray waffle iron with cooking spray and ladle batter into the iron. Close lid and cook as directed for your waffle iron. The waffles should be lightly golden brown on both sides.
Spray between each batch of waffles and repeat until you use all the batter.
To keep waffles crispy as they cool place them on a cooling or baking rack in a single layer. Stacking them will cause them to soften because of the heat and steam
Freezing Homemade Waffles
Place cooled waffles on a cookie sheet and put in the freezer until firm. Pack into freezer bags, label, date and add to your freezer inventory sheet.

Serve Frozen Waffles
Waffles can be baked in the oven or cooked in the microwave until warmed through.

For a single serving of crispy waffles reheat them in the toaster once or twice until heated through. If they stick up past the toaster then flip them and re-toast.

Pop Up Pancakes/German Pancakes/Hootananny's

Pop Up Pancake Recipe –
--- makes 24 muffins or fills a 9×13 baking pan
1 cup milk
1 cup flour
6 eggs
1/4 cup melted butter
dash salt
Preheat oven to 400* and grease your muffin tins

Mix all well in blender.
bake at 400* for 15 minutes.

Hash Brown Egg Breakfast

1 pkg (32oz) frozen cubed has brown potatoes, thawed
2 cups cubed fully cooked ham
1 ½ cups shredded cheddar cheese
1 large green pepper, chopped
1 medium onion, chopped
12 eggs, beaten
1 cup 2% milk
1 tsp salt
1 tsp pepper

Layer a third of the potatoes, ham, cheese, green pepper and onion in a greased slow cooker. Repeat layers twice. In a large bowl, whisk the eggs, milk, salt and pepper; pour over the top. Cover and cook on low for 3 ½ to 4 hours.

Yummy Buttermilk Syrup

1 cup sugar
1/2 cup buttermilk
1 cube butter
1/2 tsp. baking soda
1 Tbsp. white Karo
1 tsp. vanilla (add after cooking other stuff)
Mix all ingredients together (except vanilla) in a Medium sized pot (it bubbles and boils - leave room!, When I double it, I use my big bean pot.) Bring to a boil over medium heat, stirring continually, let boil for 5 minutes, remove from heat and add vanilla, mix well.
Awesome on Aebelskievers, Pancakes, Waffles, ice cream, fresh apple cake, dirt, anything.

French Toast in Crockpot!

Place a loaf of bread in a well-greased 6-quart slow cooker. Use a half loaf of bread for a smaller slow cooker and adjust the other ingredients accordingly. Whisk together 1 dozen eggs, 1 quart of milk, 1 tbsp. vanilla, 2 tsp. cinnamon, 1/2 tsp. salt and 1/4 cup honey. Pour this over the bread. Sprinkle 1/3 cup chopped pecans over everything. Cook on low for 6 to 8 hours until the bread has absorbed all of the liquid.

**I cooked mine for 5 hours on high. The house smelled wonderful when we came home from church!

***My family liked this. It kind of turned out like a casserole. Jared suggested putting sausage inside it and adding maple syrup to make this just a bit different. Overall I give it 3 stars.

Breakfast Bake

1 can refrigerated crescent dinner rolls
1 pkg oscar mayer smoked ham, chopped
6 eggs
1/2 cup milk
1/2 tsp pepper
1 cup Shredded cheese
1 cup shredded mozzerella cheese

Heat oven to 350. Unroll dough in 9x13 baking dish. press to cover bottom of dish, firmly pressin gholes and seams toghther to seal.

Sprinkle ham over crust. Beat eggs, milk, apnd pepper with whisk until blended. Pour over.
ham- top with cheese.

Bake 25 minutes or until center is set.

Breakfast Pizza

Despite the name of this yummy recipe-- it's quite fun to have for dinner.
Ingredients:
1 pound pork sausage
1 cup hash browns
1 cup shredded cheese
5 eggs with milk to scramble
1 (8 ounce) package of crescent rolls

Directions:
Spread crescent rolls in oiled 9 x 12-inch pan to fit bottom of pan, bringing dough up along the edges. Seal seams. Brown and drain pork sausage. Spread on crescent rolls. Cover with potatoes, scrambled eggs and sprinkle top with shredded cheese. Bake at 375 for 20 minutes.

Crockpot Breakfast

This was a recipe posted on Sheila's blog. This is what she wrote:"Last night we made our version of a crockpot breakfast. We of course needed to feed a herd of menZ, so the amount filled a large crock, but you could downsize it for your family needs or if you have company this is for you.

SELF COOKIN' BREAKFAST
2 pounds Hashed Browns (frozen)
2 pounds sausage / bacon1 diced onion
2 cans diced green chiles (7 oz.)1 pound of cheese (your favorite)
2 dozen eggs
1 cup milk
salt & pepper
First spray your crock pot (slow cooker) with PAM® to prevent sticking.Then place the hashed browns in the bottom.Next layer the sausage / bacon along with your onion & green chiles.Top with the cheese.Whisk together the eggs, milk, and salt & pepper, pour over the crock pot mixture.Go to BED!Cook on LOW for 10-12 hours.Wake UP and voilĂ !— a delicious breakfast for everyone.We served with (soft taco size) tortilla's, but you can serve with any bread you like.
