Chicken Fajita Dinner... in a foil pack


1 ½ cup instant white rice, uncooked
1 ½ cup hot water
1 T Taco Bell home originals taco seasoning mix
4 small boneless skinless chicken breasts halves
1 each green pepper and red pepper cut into strips
1 small onion, cut into strips
½ cup Salsa
½ cup Mexican Style Finely Shredded Taco Cheese
Tortillas
Sour cream if desired
Refried beans if desired

Heat oven to 400
Fold up sides of each of 4 large sheets heavy-duty foil to form a 1 inch rim.  Spray with cooking spray.  Combine rice, water, taco seasoning and spoon onto foil.  Top with chicken, peppers, onions, salsa and onion. 
Bring up foil sides, fold to make 4 packets Place in a 15x10x1 pan.   Bake 30-35 minutes or until chicken is done.  Cool 5 minutes.  Cut slits in foil to release steam before opening packets.  
Garnish with cheese, sour cream, refried beans, guacamole and serve in tortilla.


**UPDATE***
Made these tonight for the family.  Jared and I loved them but the kids weren't big fans.  Next time I will add a chicken fajita seasoning to the top and add more chicken.   I’m totally taking these camping wouldn't they be yummy as tinfoil dinners?  I think so!
